Vegan Cabbage Stuffed with Veggies and Couscous

Boil couscous. Chop fresh veggies of your choice.

Boil cabbage leaves for 3 minutes.

Stuff with all ingredients, top with tomato sauce (mushrooms would have been fabulous too)

Bake 15 minutes for a bit of crispy leaves.

 

Fun fact:  Don’t obsess about where the protein is all the time. Our diet should consist of 45-65% of our daily intake.
