Another family favorite recipe!

 

Mmmm…Chicken and Rice, a family favorite.

 

This is one of the easiest and yummiest Chicken and Rice recipes that I got from my mom many years ago. Just a few ingredients and about an hour of cooking time, and you can have an easy family dish that everyone will love!


 

LeSuer Peas ans Vigo Rice are what I like to use.

In a large pot, pour the chicken broth and add the chicken.  Boil the chicken for about 30 minutes or until the chicken is cooked and can be shredded easily.  Once the chicken is ready, remove and put into a large bowl.  Save 4 cups of the left over broth that that you used to boil the chicken.  Cook the rice as directed on the package, but use the broth in place of the water. While the rice is cooking, with two forks, shred the chicken apart.  Add the mayonnaise and cavender’s seasoning.  Mix together well.

Pre-heat oven to 350.  Once the rice is cooked spread about half of the rice in a 2 1/2 court casserole dish.  Then spoon in the chicken and mayonnaise mixture and spread evenly.  Add the remaining rice.   Top with about half of the can of peas and pimentos.  Cover with the glass lid and cook in the oven for 30-45 minutes or until hot all the way through.

As I mentioned, this is a family favorite. Sometimes to make this meal even easier (if possible) – I will put the chicken in the slow cooker all day so when I come home it’s done (and I think it tastes even better).  Then I will use the broth from the slow cooker for the rice, but it saves about 30 – 45 minutes.

  1. This looks super yummy – wonder if I could substitute something else for the peas b/c my hubby hates peas… what do you think would be a good substitute?
